La tematica dell’approvvigionamento alimentare nelle grandi metropoli europee e in particolare a Parigi, viene delineata attraverso un percorso storico che analizza le problematiche legate a diverse componenti nell’ottica della ricerca di un modello di sviluppo sostenibile. Con la nascita del concetto di ‘food miles’ vengono evidenziati nuovi risvolti rispetto alla tema complessivo sul ruolo dell’agricoltura, di prossimità ed estensiva, che impongono delle riflessioni urgenti legate agli stili di vita, alle effettive necessità alimentari e alla sottrazione di suolo fertile per usi urbani
