L’innovazione è riconosciuta in letteratura come un fenomeno positivo, capace di creare valore. Il lavoro di ricerca analizza le dinamiche di innovazione del prodotto orticolo fresco non trasformato, delineandone alcune delle traiettorie di sviluppo e diffusione. L’analisi è sviluppata attraverso l’implementazione della Grounded Theory Methodology, con l’obiettivo di generare teoria attraverso la descrizione e la comprensione dei processi, mantenendo un notevole grado di flessibilità. Il paper conferma che l’innovazione di successo può tradursi nella modifica di alcune delle condizioni di funzionamento delle relazioni di canale, mostrando però che talvolta i vincoli strutturali di filiera agiscono inibendo tali modifiche, anche fino al punto da condizionare l’esito del processo innovativo stesso.;
