The aim of this paper is to examine the impact of the market reform process, started in February 1991, upon five proteinous foods of animal derivation of the Bulgarian population using an Almost Ideal Demand System with structural change. In this paper we intend to provide further evidence of the nature of the structural change in food demand. The paper outlines the structural change in proteinuos food consumption within a model satisfying acceptable definitions of flexibility and the restrictions of utility maximisation. We develop this approach in order to explain by demand side variables the finding of structural change in demand such as the shift in proteinous foods in the beginning of 90s derived by the price liberalisation.
