Health and environmental aspects of food are particularly linked to the concept of sustainability. The relationship between food and health is of growing interest, both for problems related to obesity, and for the overall well being of the individual. Food also plays an important role with regard to environmental issues: sustainable supply, reduced consumption of energy and water, waste management and, above all, conscious purchase of food products are the main challenges that the food system will have to address in the coming years. These topics have also important effects on the organisation of the supply chains. The implementation of certification schemes relating to sustainability in the agro-food chains can have benefits in terms of exchange efficiency.
