The article focuses on the development of some socially sustainable supply chains that have emerged in the last decade as a form of bottom-up response to the ex-ploitation of migrant labour. These are production-exchange-consumption models within the wider practices of resistance to changes in the agri-food system, which have made the working conditions of foreign labourers a central element of "food quality" and supply chain sustainability. Based on a study carried out as part of an Amif project and using a qualitative approach, the paper analyses the role of the actors involved, the strategies adopted, the opportunities and limitations re-garding the creation of "sustainable" work, and the emancipation of workers from exploitation.
