In this text the author analyze "typification" phenomena (of product, practices and places) by some of their constitutive elements: singularity, authenticity and repetition in time. A special care is given to food by/with different ethnographic cases. Typical products generate and also are the result of conflicts and power relationship, which are often hidden or invisible in most work on typification. Here the author shows that political dimension is essential to the understanding of these processes.
