The purpose of this research is to analyze the flour market in terms of supply and demand in Friuli Venezia Giulia in order to measure the interest for the distribution of locally produced organic certified wheat flour in the distribution chain of supermarkets. The study is divided into two phases: a detailed analysis of the market system’s final meal took place in order to understand the mechanisms of distribution and dissemination of products and a second phase aims to analyze, by administering a questionnaire, trends and the characteristics of consumers of flour. The results of the flour market situation show a fairly conventional situation, even in light of national data, but particularly interesting are the results of the survey which shows a variety of factors of variability in the responses as well as trends in behaviors that make the market for such very complex and structured products. In general, there has been a sustained interest in high quality products in the large distribution chains.
