This article analyses the impact of the entry of East European countries in eu on the composition of the farmworkers in the two most representative Mediterranean countries, which are Spain and Italy, through a transnational comparative approaches. The study shows the substantial increase of the European component fits into a system of complex layers and overlapping composed of genders, skin color and nationalities, which underpins the Mediterranean agricultural labour market. This article is based on the field-research of some agricultural districts with higher incidence of migrant seasonal work Foggia, Huelva and Valencia). It puts in relationship this progressive process of ethnic replacement in agriculture in southern Europe with the trends ‘to grey’ and ‘to legalize’ the exploitation of migrant labourers.
